I served this meal to my family on Shrove Tuesday as a not-so-traditional pancake supper and the crowd went wild. The crowd of course, was my family. The kids exclaimed, “You are the BEST mom EVER!” So, what was the dish worthy of such praise? I like to call it, Breakfast Skewers!Ingredients: Makes about 12 skewers
- Your favorite pancake recipe (or boxed batter), prepared and ready to cook
- 1 lb bulk sausage
- 1 lb strawberries, rinsed, hulled and sliced in half
- pancake syrup
Open the package of sausage and using your hands, form silver dollar sized sausage patties. Brown over medium heat until cooked through. Set aside on a paper towel to drain.Pour silver dollar sized batter circles on skillet. When the underside is golden brown, flip over and cook until golden brown on both sides.
